Ingredients:
- 
½ cup avocado oil 
- 
1 ½ cups granulated sugar 
- 
4 large eggs, refrigerated 
- 
2 cups all-purpose flour 
- 
1 ½ cups cocoa powder 
- 
2 tsp baking powder 
- 
2 tsp salt 
- 
2 tsp vanilla extract 
- 
1 cup icing sugar for rolling 
- 
1 cup granulated sugar for rolling 
Directions:
- 
With a hand mixer, using the paddle attachment beat oil and sugar in a medium bowl on medium speed for 2 minutes. 
- 
In a medium bowl, whisk together the cocoa powder, flour, baking powder, and salt. Set aside. 
- 
Add one egg at a time to the oil and sugar mixture on low speed. 
- 
Add vanilla on low until combined. 
- 
Fold in the flour mix in 3 batches and mix until combined. 
- 
Divide dough into 2 equal portions. Wrap dough and place in the freezer to chill. 
- 
Prepare your bowls of sugar and sheet pans lined with parchment paper. 
- 
Remove 1 portion of dough and form 12 equal balls. Roll in granulated sugar, AND THEN icing sugar. Place on a sheet pan lined with parchment at least 1 inch apart. 
- 
Bake for 9 minutes @ 350℉. 
- 
While the first tray of cookies is baking, prepare the second portion for baking. 
- 
Remove the first tray from the oven and bake the second tray. 
- 
Let cookies cool completely before eating.
